On the 21 Day Fix you get to eat lots and lots of YUMMY meals. Often at the end of the day, I’m left with more containers than I can eat. Here is a delicious fix that allows you to use up some of those extras while satisfying your need for something savory! I could seriously eat this every.single.day.
This is one of my favorite recipes!
This recipe uses 1 yellow, 1 red, 1 green, and 1 blue! And if you really don’t want to use up your precious yellow containers, it tastes just as delicious without tortilla chips!
-organic tortilla chips broken into bite-size pieces (1 yellow)
-ground turkey or chicken, seasoned (1 red)
-diced bell peppers & onions, (1/2 green)
-chopped spinach for topping, (1/2 green)
-grated cheddar cheese, (1/2 blue)
-ripe avocado, (1/2 blue)
-fresh salsa, 2tbsp free
- Arrange chips on a small oven-proof tray
- Layer on meat, then veggies, then cheese
- Bake in the oven at 350 until cheese is melted
- Transfer nachos to your plate & top with spinach, avocado & salsa
