A very dear friend of the family was recently diagnosed with Celiacs Disease–her entire life makes sense now! She has had so many gastric issues and has been suffering terribly. According to the Celiac Disease Foundation, Celiac disease is an autoimmune disorder that can occur in genetically predisposed people where the ingestion of gluten leads to damage in the small intestine. It is estimated to affect 1 in 100 people worldwide. Two and one-half million Americans are un-diagnosed and are at risk for long-term health complications.
I’ve been working with her to find gluten free items she can afford. Ideally, she would be cooking from scratch but sometimes she likes a quick meal or to indulge a bit.
