A very dear friend of the family was recently diagnosed with Celiacs Disease–her entire life makes sense now! She has had so many gastric issues and has been suffering terribly. According to the Celiac Disease Foundation, Celiac disease is an autoimmune disorder that can occur in genetically predisposed people where the ingestion of gluten leads to damage in the small intestine. It is estimated to affect 1 in 100 people worldwide. Two and one-half million Americans are un-diagnosed and are at risk for long-term health complications.
I’ve been working with her to find gluten free items she can afford. Ideally, she would be cooking from scratch but sometimes she likes a quick meal or to indulge a bit.
(Thank you to Sverve and Walmart for sponsoring today’s post. All opinions and recipes are my own.)
I took her to Walmart to check out their selection.
We found a gluten free demo!
She approves!I was really surprised how good the Glutino Chocolate Chip Cookies tasted! I’ve had some AWFUL gluten free foods, but these taste like regular cookies!

Everyone loves homemade, but who doesn’t love a quick meal sometimes? 😉 Those cookies are so good!

Those chocolate chip cookies were so good. I loved the bread from Udi’s too. I tried a sample of a grilled cheese and it was perfect.
