Just a couple of days ago, I returned from a lovely trip to both London and Dubai. With Dubai, you’ve got the land of YES – it’s extravagant, fueled by tourism, and grandeur visions of BIG THINGS. Case in point:

Now London, on the other hand, is full of old-world European charm with a mix of new. While the luxury of Dubai was nice, I fell in LOVE with London. The architecture, the accents, the history…it transported me back in time.
Between actually visiting London, finishing all of the seasons of Downton Abbey, and starting Season 2 of The Crown, I’m just a wee bit obsessed with TEA PARTIES. Sure, tea parties are things I do on the regular w/ the kiddos, but I’m finding myself going completely out-of-my-way to indulge in them. Buying #allthetea, making #allthefood, and sticking that pinky sky high.
I may need an intervention soon.
I started to think about different things that could be served at a tea party, and thought I’d put a spin on my dad’s famous potato salad and instead make an egg salad. This turned out really well and was quickly devoured by all. You don’t have to keep this just for tea parties – you can make them for dinner parties, potlucks, luncheons, and more. If you pair it with Yellow Tail wine, you can get super fancy! Look for Great Day Farms coupons on the neck of Yellow Tail wine! Or, pair it with tea and jars of candy for the kiddos. I promise you – it will be loved by all!
A couple of notes:
I prefer using Great Day Farms Hard-Boiled eggs because they do the prep work for me…and no chance of getting egg shells in the salad (isn’t that the worst?)! You can find these eggs in the DELI section of Walmart.
- 2 Great Day Farms Hard-Boiled eggs
- 1 Tbsp plain mayonnaise
- 1 Tbsp blueberry yogurt (if all you have is plain, use that, but add a few tsp of sugar)
- 1 Tbsp dijon mustard
- 1 tsp dill
- 1 tsp fresh parsley
- Sea salt and black pepper to taste
- 4 slices of white bread
- Mash the egg yolks with a fork until they make a thick paste, and finely chop the whites
- Mix in the mayonnaise, yogurt, mustard, dill, parsley, salt, and pepper until well-mixed
- Spread on your sandwich, and cut into triangles
